Senior Development Chef - Qatar Airways - Doha

In this role you will be responsible to translate the Qatar Airways brand characteristics into a world-leading airline cuisine product. As a Senior Development Chef you will provide Specialist support to the development of innovative menus and all service components by providing practical and hands-on support to suppliers and catering performance team to ensure delivery of five star product and food which is outstanding as a standard network - wide. You will track and report on compliance to QR standards and support delivery of all aspects of QR's Food and Beverage (F&B) offer as required.

Operational
* Responsible for providing robust and specialist culinary support to the development process of new menus for selected group of stations/ caterers ensuring compliance within defined parameters
* Defines and develops detailed recipes and product specifications for each individual menu component as required
* Monitors and Reports on product quality performance worldwide in regards to food and beverage delivery with detailed reports to colleagues and senior management to build and drive delivery of improved consistency of food and beverage. 
* Actively monitors cost impacts and seeks out broad alliance opportunities to enhance the customer offer whilst mitigating cost
* Responsible for reviewing the quality and consistency of all F&B documentation such as menus and plating guides
* Responsible for providing hands - on support to internal and external events as required representing QR to the best manner to all parties
* Evaluates different supply opportunities from an operational and financial perspective providing analysis as appropriate to support business decisions and recommendations
* Leads culinary input to station catering supplier selection processes, delivering robust analysis of caterer capability and clear recommendation to support business decisions
* Manages suppliers to develop central sourcing and other supply opportunities in all markets to improve product consistency and reduce cost
* Co-ordination of menu changes with all stakeholders at all times to ensure clarity for the suppliers and internal teams
* Works directly with suppliers and teams to deliver the QR food vision, style and standards against clear plans and carries out regular checks of inbound/outbound food reporting results to ensure delivery is to specification.
* Translates the Qatar Airways food and beverage philosophy into appropriate menus reflecting the cuisine characteristic of one or more specific culinary regions
* Proposes and prepares menu items suitable for service in all the three cabins and on all lengths of flights.
* Responsible for ensuring the accurate documentation of recipes, techniques, trips/tricks and inspiration into the Qatar Airways F&B Manual and ensure that the menu grids reflect the ingredients and recipes required to create the dishes 
* Responsible for ensuring the accurate preparation of appropriate menu card documentation to effectively and efficiently communicate the nature of the cuisines to the passengers
* Develop and manage menu structures, sector service matrices, rations and menu concepts to reflect the characteristics of the Qatar Airways passengers and ensure that the full information is provided to the catering team so that the product can be raised in production and to maximize customer satisfaction
* Responsible for the planning, organizing and conduct of service simulations and trials when required and responsible for carrying out product research and development into F&B trends.
* Support the airline's service delivery teams to ensure that they are effectively able to deliver the chef's cuisine products onboard Qatar Airways flights
* Research new developments in cuisine and implement innovative recipes, techniques, culinary styles and presentation techniques into the cuisine offering
* Provide input to the development menu rotation strategies
* Monitor passenger and crew feedback to identify opportunities to improve the cuisine product
You should hold Bachelor Degree with minimum 7 years of job related experience or Hotel Management/Culinary arts with 10+ years of hands on food related experience given the nature of the role

Previous experience
* Experience in contract food service or a fine dining establishment
* Experience in food product development
* Menu Development experience for a major airline
* Cabin Crew experience is an advantage

Job Skills
* Creative flair to the culinary arts and exposure to the latest trends and developments in cuisine
* Excellent knowledge of Catering, food quality and production methods
* Proficiency in menu cost control, catering management and inventory management
* Excellent organisation and planning skills
* Proficient in MS Office suits

The Manager Food and Beverage Development shall be responsible ensure that all Menu plans and Food and Beverages elements are as per Qatar Airways set processes maintaining high quality and standards, in order to support the exemplary image of all Qatar Airways air crafts and lounges. The position holder shall be responsible to manage processes and delivery of Qatar Airways food and beverage quality and standards programme to all network-wide stations in order to provide consistency and quality to all Qatar Airways customers. The Manager Food and Beverage Development shall monitor international best practice in terms of food perpetration, current international trends and supplier’s for catering considering sector specific requirements. 

Strategic
* The role will develop and improve Menu items and all creative/innovative dining ingenuities based on customer feedback and interaction, performing in-depth market research to update on current trends and initiatives.
* Develop new sourcing opportunities by researching suppliers in the market in order to improve product consistency and attempt to reduce cost. 
* Responsible for the development, maintenance, update and communication of menu planning structure, timelines and detailed requirements for all routes and meal services ensuring consistency of Qatar Airways Food and Beverage services network-wide.
* Ensure compliance and delivery timescales are met by maintaining stipulated budgets and confirm that Food and Beverage products are constantly developed in order to keep pace with the constantly evolving trends within aviation.
* Build and deliver robust Food and Beverage Plans and maximize product development including delivery of Fine Dining Services in order to assist in the improvement of product quality and consistency.

Operational 
* Manages the utilization of Senior Development Chefs and Nominated Product Specialists in order to ensure compliance with requirements of standards, style and budget. Drives the need for continuous improvement and recommendation of quality enhancements for Qatar Airways Food and Beverage suggestions.
* Interpret Qatar Airways vision and style of fine dining standards into actionable plans, document all procedures and processes in order to ensure delivery of a coherent and comprehensible style, characteristic, profile and language across the fleet and ensure consistent on-time delivery as per approved guidelines.
* Track product delivery/quality and performance of all Lounges within the Qatar Airways network worldwide and compare/benchmark them against competitor airlines with regards to food and beverage delivery. 
* Provide detailed reports to stakeholder departments such as Lounges, etc; including executive summaries for senior management in order to assess and build a robust delivery system of improved consistency of Qatar Airways Food and beverage areas.
* Lead the culinary input team including assistance with selection of outstation catering suppliers and supplier recommendations in delivering robust Food and Beverage services based on through analysis and catering capability including commercial justification in order to support clear recommendations enabling good business decisions.
* Responsible to actively monitor and manage cost impacts and delivering appropriate brand association opportunities to enhance customer satisfaction whilst mitigating cost. 
* Ensures co-ordination with Delivery and Commercial teams at all times in order to guarantee consistency. 
* Responsible to collectively coordinate tasks with key suppliers especially Qatar Aircraft Catering Company (QACC) to determine effective food delivery by introducing a systematic food supplier plan which leverages tactical and strategic supplier relationships to deliver tangible customer benefit and decreased cost.
* Ensures close coordination with Delivery and Commercial teams in order to build a strong network of available resources and encourage communication between respective teams such as Crew and colleagues, by receiving feedback and suggestions in order to improve services.
* Responsible to ensure that Standard and Procedures the Product Delivery Department and suppliers are made aware of any changes to any instances related to processes or services in a timely manner.
* Ensure that all stakeholder needs are effectively managed by following a systematic process flow, clear communication and all issues are discussed in an open environment prior to confirmation of services.
* Responsible for collating competitor analysis and hospitality trends, generate quarterly reports to senior management on key changes and any potential development that may affect Qatar Airway’s services

Management & Leadership
* Establish the department or teams objectives and priorities to align with and support business objectives.
* Regularly evaluate the department or teams objectives, plans, procedures and practices, and makes appropriate changes if needed.
* Oversee and supervise employees. Direct daily activities, recruit, train, develop and discipline to ensure a high standard of service delivery.

Development
* Take responsibility for own ongoing personal development and growth of expertise.
* Train and develop other employees, for proper succession planning and risk management.
* Assist in the response to any emergency or a major operational disruption affecting Qatar Airways or its subsidiaries, including support of the Qatar Airways Special Assistance Program. 
* Train Qatari staff in the duties above.
* Perform other department duties related to his/her position as directed by the Head of the Department.

Operational Safety 
* Responsible to ensure that employees at all levels understand work health and safety requirements and expectations through provision of relevant QR Group induction, information, instruction, training and supervision.
* Responsible for ensuring that all food proposals are correctly risk assessed and controlled from a food safety perspective in association with the Compliance team and suppliers. 
* Ensure compliance to all relevant safety, security, quality and environmental management policies, procedures and controls across the operation to assure employee safety, security, legislative compliance and delivery of high quality service with a responsible environmental attitude.
* Ensure that all managers and supervisors understand work health and safety requirements and expectations to the extent that they can pass on relevant information, identify training needs and provide appropriate supervision in their workplace.
* Take a direct and personal interest in reported injuries, incidents, near misses and hazards to ensure that appropriate reporting, investigation and response is being achieved

Environmental Competencies
* Contribute towards Qatar Airways Group Environmental Objectives and targets and the implementation and maintenance of the Environmental Management System.
* Apply environmental knowledge and principles in your role, and incorporate this into business processes and decision making, to drive efficiency and reduce environmental and operational risks.

In this role you will ensure that Airport Operations in all areas run smoothly, in a cost effective manner, and conform to safety and security requirements. Essential to this role is ensuring that customers are provided with the Qatar Airways 5 Star service promise, thus creating a competitive advantage for Qatar Airways in all ground products and services.

You will champion the Qatar Airways customer, employees, our contractors and our Airline in all phases of the airport operation to provide a safe, professional and on time operation that exceeds the internal and external customer expectations and attains the 5 star on the Ground service promise.

Responsible for training and resource planning you will recommend staffing levels, plan and implement working schedules, implement necessary controls and ensure compliance with labour laws. You will handle irregular operations at minimum cost whilst ensuring an impeccable level of customer service and ensure operations are within budget. You will monitor all airport use agreements, rental agreements and third party service providers.

Specific accountabilities include:
* Managing the daily operation and acting as a liaison between airport service providers, government agencies and authorities, and senior management
* Providing inputs and recommendations to management regarding short and long term service improvements and changes
* Acting as the Primary contact and liaison person for all areas of the QR airport operation at the station
* Performing personnel administration for direct reports, including selection, training, performance appraisals, employee development, and take affirmative action
* Establishing the department or team objectives and priorities to align with and support business objectives
To join our 5 star team in this role you will need a Bachelor's Degree or an aviation related management qualification with at least 3 years experience as an airport manager with a major airline.

You will have a minimum of 5 years experience within an airline, customer service environment or GHA operations environment including varying supervisory and management roles. Extensive overall knowledge of all areas of airport operations is required.

Fluency in English is essential with Arabic as an advantage.

You will support Account Managers from an office base and be responsible for managing and developing relationships with Qatar Airways Corporate and Leisure customer. The job holder will do this by engaging day-to-day working with Account Managers and interfacing with various other department with QR. You will also be accountable for keeping the accounts updated for audit purposes and database records. You will assist Account Managers in maximising revenue contribution to exceed revenue targets.

Specific accountabilities include:
* Ensuring full administration support is delivered to Account Managers through Head office, Customer Relations and Marketing
* Creating and implementing marketing and incentive schemes within budget to drive incremental business
* Monitoring and analysing sales and deal performance of customers, identifying and addressing shortfalls, and formulating solutions with Account Managers
