Senior Cook

This company is based at Sharjah International Airport.

We currently have an exciting opportunity that has become available for an experienced and qualified Senior Cook to join our successful business.

The position:
Total supervision of a section, this includes but not limited to staff, controlling recipes, food quality and wastage. Furthermore, conducting on the job training for all new employees.

Responsibilities: 
• To prepare meals as specified in the recipe book and portions specification book from a menu laid down by the Sous Chef or Production Manager. 
• To handle food in a hygienic manner, as laid down in current legislation. 
• To maintain good standards of hygiene in the unit and personal hygiene. 
• To suggest innovative menu ideas. 
• To prepare and cook fresh food items and work within a specific menu cycle, including catering functions. 
• To order necessary food for chosen menu as required by the Senior Chefs. 
• To assist with stock control, stock ordering and rotation, receive and check deliveries, store as appropriate and correct. 
• Runs a full section of the service, assist other sections as required. 
• Cleans and maintains all equipment and areas used during working shift. 
• Operates equipment safely and correctly as instructed by management. 
• Maintains and completes catering records and documentation as required.
• Attends training sessions as required. 
• Meets time deadlines as part of a daily meals provision service.
• To give assistance to Senior Sous Chef.
• To be fully aware of, and able to carry out the full duties of a cook.
• On occasions, to work without supervision, maintaining standards and control during these times
• Any other reasonable and relevant catering tasks as required by the department.
• Minimum of 3 years in increasingly complex levels of cooking in a large food service environment.
• Knowledge and expertise in a variety of cooking techniques and recipes for food preparation in a large dining service or catering program; knowledge of how to prepare a large variety of sauces, soups, vegetables, baked products and entrees.
• Ability to taste and evaluate all foods. 
• Working knowledge of department requirements and procedures.
• Experience and skill in Catering / Restaurant work, knowledge of food merchandising, hot and cold platter presentation techniques, banquet and buffet food service.
• Ability to prepare complex menus and perform multiple tasks simultaneously.

Duty Officer

- Personally interacts with senior cabin crew and VIP catering management to help provide a seamless and timely service delivery
- Uses local knowledge and negotiation skills when trying to fulfil the stretched demands of customers, even at short notice and in doing so works hand in hand with the procurement team.
- Understands the behavioural and performance standards of his direct reports, and takes appropriate and consistent actions that fall in line with Group protocols in relation to training and disciplinary proceedings to encourage relevant improvement 
- Acts as the shift standard bearer in regards 5s methodology, and conducts daily audits against agreed standards, and takes corrective actions where required.
- Responsible for all safety audits and inspections, and acts as the standard bearer on the shift in regards safety management.
- Is accountable for the accuracy and timeliness of service delivery for all flights during the shift by monitoring supervisory activities, maintaining the provided KPI’s relating to staff performance

- Accountable for the accuracy of the inventory counts across the shift, where discrepancies may lead to financial loss for Alpha
- Communicating throughout the shift with the kitchen team, the replenishment team and ware wash to ensure a smooth and timely flow of materials and equipment to the flight prep function
- Support and leadership for the operations controllers, cashiers, and replenishment teams when the Administration Support Supervisor is not on duty
- Personal management of all VIP requirements on the shift, from procurement, liaising with the kitchen and sourcing the required goods and equipment, and communication with the client throughout
- Responsible for all daily tool box talks, and capturing all relevant concerns and comments from staff during these processes
- Post Graduate/Graduate or equivalent qualification
- High standards of verbal and written communication in English. 
- Significant supervisory skills and organization competencies.
- Experience in airline catering supply chain management
- Demonstrated ability to manage staff.
- Ability to conduct multiple parallel process audits, good organizational skills.
- Ability to work in a professional manner with the ability to work under pressure, to meet targets, and achieve results.
- Structured and methodical approach to problem solving
- Good IT skills. 
- Knowledge of airline industry standards
- Process Auditing skills.

Purpose: To prepare food up to the standards of the client by following the HACCP standards in the production department. 

Responsibilities: 
- Inspects food preparation and serving areas to ensure observance of safe, sanitary food-handling practices. 
- Turns or stirs food to ensure even cooking.
- Seasons and cooks food according to recipes or personal judgment and experience. 
- Observes and tests food to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils. 
- Weighs, measures, and mixes ingredients according to recipes or personal judgment, using various kitchen utensils and equipment.
- Portions, arranges, and garnishes food, and serves food to waiters if allocated in outlets. 
- Regulates temperature of ovens, broilers, grills, and roasters.
- Substitutes for or assists other cooks during emergencies or rush periods.
- Bakes, roasts, boils, and steams meats, fish, vegetables, and other foods.
- Washes, peels, cuts, and seeds fruits and vegetables to prepare them for consumption.
- Estimates expected food consumption; then requisition or purchase supplies, or procure food from storage.
- Butchers and dress animals, fowl, or shellfish, or cut and bone meat prior to cooking.
- Bakes breads, rolls, cakes, and pastries.
- Cleans food preparation areas, cooking surfaces, and utensils.
- Maintains sanitation, health, and safety standards in work areas.
- Measures ingredients required for specific food items being prepared.
- Operates large-volume cooking equipment such as grills, deep-fat fryers, or griddles.
- Pre-cook items such as bacon, in order to prepare them for later use.
- Verifies that prepared food meets requirements for quality and quantity.
- Washes, cuts, and prepares foods designated for cooking.
- Cleans, stocks, and restocks workstations and display cases.
- Orders and takes delivery of supplies.
- Schedules activities and equipment use with managers, using information about daily menus to help coordinate cooking times.
- Keeps records and accounts.
- Performs additional responsibilities as requested by the Senior Cook, Chef de Partie, Sous Chef, \or Production Manager at any time.
- Minimum 3 to 5 years’ experience in inflight catering
- Basic understanding of professional cooking and knife handling skills. 
- Understanding and knowledge of safety, sanitation and food handling procedures. 
- Previous prep or line cook experience.
- Professional communication skills are required. 
- Ability to take direction. Ability to work in a team environment. 
- Ability to work calmly and effectively under pressure.
- Must have problem solving abilities, be self-motivated and organized. 
- Commitment to quality service, and food and beverage knowledge.
- Food Handlers permit required. 
- Must be able to work nights, weekends and some holidays. 
- Must be able to speak, read and understand basic cooking directions.
